Homemade Fruit Snacks

Ingredients

  • 2/3 cup fresh lemon juice or fresh orange juice

  • 2/3 cup frozen or fresh berries For example: Strawberries, Blueberries or Raspberries

  • 1- 1/2 Tbsp honey

  • 5 Tbsp gelatin (I suggest Great Lakes Gelatin. It's grass-fed & pasture-raised, kosher, keto certified, paleo-friendly, gluten-free, non-GMO and glyphosate free.)

Instructions

  1. Mix juice and berries in a small saucepan. Heat over medium heat, stirring occasionally until berries become tender and start to soften.

  2. Add honey and continue to stir until completely incorporated. You want the fruit to dissolve quite a bit.

  3. Turn the heat off, and quickly whisk in gelatin one tablespoon at a time. Whisk until it's completely incorporated, mixing the gelatin in very gradually to avoid lumps.

  4. Puree mixture using a blender. Make sure to cool slightly before moving.

  5. Pour into a glass dish .

For example: You may use a 8 x 8 or 9 x 9 glass dish. Refrigerate for 30 minutes to an hour. Cut in small squares. I have tried other shapes and molds can be fun too.
