Steamed Stone Crabs

Ingredients

  • 8 tbsp. (1 stick) butter

  • 2 ro 3 bunches of stone crab

  • 1 lemon, cut into wedges

Instructions

  1. Bring water to a boil in a steamer pot. Add stone crabs to steamer pot. Cover and steam until heated through, about 5 minutes.

  2. In the meantime, start by melting unsalted butter over low heat. Very low heat. If the butter boils, the milk solids get dispersed throughout the fat and you won't be able to skim them off.

  3. Skim off the foamy milk solids that rose to the top of butter. The leftover at the bottom is your clarified butter.

  4. Remove claws from steamer, crack shells, and serve with melted butter and lemon wedges. Super easy. You can throw clams, mussels or anything else you adore. Enjoy.
